Blue Crab Chili

Ingredients
- 1/4 cup butter
- 1/4 cup flour
- 3 cups water
- 2/3 cup heavy cream
- 7 oz fresh or canned blue crab meat
- flour tortillas cut in wedges
- 1 small yellow onion diced
- 1 TBS Dry Jerk Seasoning Blend (unsalted)
- 1 TBS + 1/2 TSP Minor's crab base
- 1 cup small white beans (cooked not dry)
- fresh ground pepper to taste

Preparation
Step 1
Disolve crab base in water to make stock and set aside. Melt butter in pan over medium heat. Add onions flour and jerk seasoning to make a roux. Stirring constantly 3-4 minutes or more, until roux is a light golden brown. Whisk in small amounts of crab stock, stirring constantly, until no lmps remain. Reduce heat and allow mixture to simmer 20-25 minutes, do not boil. Add cream and beans, simmer 5-10 mins, add crab and heat through. Season to taste with pepper and herbs. If desired fry tortillas until golden and sprinkle with salt or jerk seasoning
