Rhubarb Cake

Ingredients

  • CAKE
  • 3 cups chopped rhubarb
  • 1 1/2 cup white or 1 3/4 cups brown sugar
  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • pinch of salt
  • 2 eggs
  • 1/2 cup oil
  • 1 cup milk
  • 1 tsp vanilla
  • TOPPING
  • 1/2 cup flour
  • 1 cup brown sugar
  • 6 tbsp butter

Preparation

Step 1

Mix cake ingredients well, spread in a 13" pan.
Sprinkle topping on batter.
Bake 350F for 40 - 50 minutes.
