Ingredients
- BASE:
- 2/3 c of mascarpone cheese
- 2 tablespoons of sugar
- 1 tsp Vanilla bean paste
- 3 Tablespoons of whipping cream
- 1 egg
- Sweet phyllo crust
Preparation
Step 1
1. Put the mascarpone cheese, vanilla bean paste and sugar and mix until lightly incorporated.
2. Now add the whipping cream - and whisk by hand.
3. Add the egg.
4. This recipe is enough for 2 med sized ramekins.
5. Butter the ramekins well and place in a pan.
6. Fill the pan with a water bath about 1/2 way with water.
7. Bake in a 325 oven for 35 mins.
8. Once cooked wait 10 minutes before turning out onto phyllo
BASE:
1. melt some butter in a pot.
2. Lay down one phyllo sheets with a light brushing of butter.
3. lay down the 2nd phyllo sheet - but only butter half, sprinkle the half butter sheet with sugar and fold (lengthwise).
4. Again brush half horizontal phyllo with butter, sprinkle with sugar and fold.
5. Do a final brush of butter and a light sprinkle of sugar. Use a cookie cutter approx. the same size as the ramekins.
6. Bake in 325 oven for 10 - 12 mins, or until golden brown.
TO FINISH OF THE CREME BRULEE:
Sprinkle a generous amount of sugar to the tops and melt using a blow torch.
