Southern BBQ Chicken Over Crispy Greens

Ingredients

  • 6 cups torn romaine lettuce leaves (about 10 oz.)
  • 3/4 lb. sliced cooked barbecued chicken breasts
  • 2 medium tomatoes, cut into thin wedges
  • 1/2 cup fresh or canned, drained whole kernel corn
  • 1/2 cup black eyed peas or black beans, rinsed and drained
  • 1/4 cup thinly sliced red onion
  • 1/2 cup Ranch Dressing of choice

Preparation

Step 1

Arrange lettuce on serving platter, then top with chicken, tomatoes, corn, peas and onion. To serve, drizzle with Ranch Dressing.
