CHICKEN & RICE CASSEROLE
- 1 1/2 cups uncooked rice
- 2 1/2 cups chicken broth
- 2 1/2 lbs. chicken (breasts or strips)
- 1 pkg dry onion soup mix
- 2 cans cream of mushroom soup
- 1 Tbsp parsley
Grease 9x13 pan. Spread rice in bottom of casserole. Add broth. Baste chicken with olive oil and place chicken on top of rice. Cover with dry onion soup, mushroom soup, paprika and parsley. Cover with foil and bake at 350 for 2 ½ hours.
