DAFFODIL LAYERS ANGEL FOOD CAKE

  • 1/2 envelope unflavoured gelatin (1 1/2 tsp)
  • 3/4 tsp grated lemon peel
  • 1/2 cup sugar
  • 3 beaten egg yolks
  • 1/3 cup lemon juice
  • 3 egg whites
  • 1/4 cup sugar
  • Yellow food colouring
  • Angel food cake
  • 1 3/4 cups whipping cream, whipped

Preparation

Step 1

Combine gelatin, 1/2 cup and sugar in top of double boiler. Add egg yolks, lemon peel and lemon juice. Cook over hot, not boiling water, stirring until slightly thickened and gelatine is dissolved. Cook until partially set. Beat egg whites until soft peaks; gradually add 1/4 cup sugar and beat until stiff. Fold into gelatin mixture. Tint with food colouring. Cut cake into 3 layers, and spread gelatine mixture between layers. Frost cake with whipped cream and garnish with grated lemon peel.
