Ingredients

  • BATTER:
  • 2 lbs. blackberries {fresh or frozen)
  • 1 c. unsalted butter, softened 1 c. sugar
  • 1 c. milk
  • 2 c. all purpose flour
  • 2 tsp. baking powder 1/2 tsp. salt
  • 2 tsp. vanilla
  • SYRUP: 1 c. sugar 1/2 c. water

Step 1

Preheat oven to 350 degrees. Butter a 13x9 baking dish and line with berries. For the batter, cream together butter and sugar, then add milk gradually. Combine dry ingredients and add to batter gradually. Stir in vanilla. Pour batter over fruit.

For the syrup, combine sugar and water in a saucepan over medium heat and bring to boil. Pour hot syrup evenly over batter. Bake 50-60 min. until crust is golden brown and fruit is bubbly. Serve a la mode, with creme fraiche or a splash of cream or milk, if desired.
