Roasted Garlic - Olive Oil "Butter"

Ingredients
- 1 whole head roasted garlic (see recipe)
- 1/2 cup extra-virgin olive oil
- Pinch of salt

Step 1
Squeeze all of the garlic out of the peels into your blender, mini-processor, or hand blender, and add the olive oil and salt. Blend until creamy. Pour into a small, covered container, and refrigerate until it firms to a spreadable consistency. (This might take 2 days or so.) All od the garlic will go to the bottom, so when it is firm, stir the mixture until it is homogenous, then smooth the top and keep refrigerated.
If you like, add fresh herbs to the mixture.
