Turkey Steaks in Wine

Ingredients
- 1 1/2 lb turkey breast, cut in 8 slices
- 2 T olive oil
- 2 T butter
- 4 garlic cloves
- 1 bay leaf
- 1 t thyme
- 1/3 C dry white wine
- 1/3 C chicken broth
- 2 T chopped parsley
- 2 T capers
- Black pepper

Preparation
Step 1
Place each turkey steak between sheets of waxed paper & pound to 1/4" thick. Sprinkle with salt & pepper. Use large skillet to hold all slices or use 2 skillets
Heat olive oil & 1 T butter. Add turkey, garlic, bay leaf & thyme. Cook over mid-hi heat @ 5 min til lightly browned on both sides
Remove turkey to serving platter & keep warm. Add wine to pan & cook over hi heat til reduced by half. Stir often to mix in brown particles. Add broth & boil til reduced by half.
Stir in remaining T butter, chapers & chopped parsley.
Return turkey to pan & briefly reheat. Remove bay leaf & serve.
