Scalloped Vegetable Casserole

Ingredients
- 6 Cups broccoli
- 6 Cups Cauliflower
- 2 Cups Sliced Carrots
- 1/2 Cup Butter
- 1 Cup Chopped onions
- 2 Cloves garlic minced
- 1/3 Cup Flour
- 1 1/2 Cups milk
- 1 Cup sour cream
- 1 (8oz package shredded cheese)
- 1 1/2 tsp salt
- 1 tsp pepper
- 1/2 Cup crushed round crackers

Preparation
Step 1
Combine broccoli, cauliflower, & carrots in large pot add water to cover. Bring to a boil over medium high heat. Simmer for 8 minutes or until vegetables are tender.
Drain Well
Return vegetable to pot.
Preheat oven to 350*
Spray a 3 quart baking dish with non stick cooking spray.
In a large sauce pan melt butter over medium heat add onion & garlic cook stirring regularly for 5 minutes. Add flour & cook stiring constantly for 2 minutes. Gradually wisk in milk. Cook wisking constantly for 3 minutes or until thick & bubbly. Add sour cream stirring to combine. Add 1 1/2 Cups cheese salt & pepper. Add cheese mixtre to vegetables in pot stir gently to coat.
Spoon mixture into prepared baking dish.
Top with crushed crackers & remaining 1/2 cup cheese.
Bake for 30-40 minutes or until hot & bubbly
