Ingredients
- 1 c. chopped cilantro
- 2 c. diced cucumber
- 2 c. diced tomato
- 1 tsp. cayenne
- 1 tsp. himalayan sea salt
- 2 tsp. fresh lemon juice
- 1 chopped ripe, large avocado
- 1/2 c. freshly grated parmesan cheese or non-dairy parmesan cheese

This salad is surprisingly delicious, given its simplicity. It can be tossed together in just a few minutes, and a large batch can be stored in the fridge for several days. I also like to add equal parts of quinoa for a filling meal. Either way, it’s packed with cleansing antioxidants and is the perfect start for a healthier you in 2014.
In a large mixing bowl, combine all ingredients except avocado. Mix using a large spoon. Add avocado just before serving. Mix well, allowing avocado to coat the salad.
