Ingredients

  • 1 pound soba noodles (or spaghetti)
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 3/4 cup rice vinegar (or white-wine vinegar)
  • 2 tablespoons lime juice
  • 2 teaspoons toasted sesame oil
  • 2 garlic cloves, minced
  • 1 teaspoon grated ginger
  • 1 cup thinly sliced snow peas
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 4 scallions, thinly sliced
