Ingredients
- 1 pound soba noodles (or spaghetti)
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 3/4 cup rice vinegar (or white-wine vinegar)
- 2 tablespoons lime juice
- 2 teaspoons toasted sesame oil
- 2 garlic cloves, minced
- 1 teaspoon grated ginger
- 1 cup thinly sliced snow peas
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 4 scallions, thinly sliced

Step 1
Cook noodles according to package instructions. While the noodles are cooking, combine peanut butter, soy sauce, vinegar, lime juice, sesame oil, garlic, and ginger in a small saucepan over low heat. Stir constantly until the peanut butter totally melts.
In a large bowl, combine noodles, peanut butter mixture, and vegetables Can be served hot or cold.
