Ingredients

  • 1/2 Roma tomato, chopped
  • 2 T olive oil
  • 1 T white whine vinegar
  • 1 T minced shallots
  • salt & pepper to taste
  • 1 cup thinly sliced romaine lettuce
  • 1 1/2 Roma Tomatoes, sliced into wedges
  • 1/2 cup sliced cucumber

Preparation

Step 1

Puree chopped tomato, oil, vinegar, and shallots in a mini food processor or blender. Season vinaigrette with the salt and pepper.

Divide Romaine, tomato wedges, and cucumber between 2 plates. Drizzle with vinaigrette.
