Chewy Nut and Fruit Granola Bars

Ingredients

  • 2 cups old fashioned oats
  • 1/2 cups sunflower seeds
  • 1 cup chopped almonds
  • 1/2 cup peanuts
  • 1/2 cup raw honey
  • 1/3 cup peanut butter
  • 1 oz butter
  • 2 tsp vanilla extract
  • 1/2 tsp sea salt
  • 1 1/2 cups dried fruit

Preparation

Step 1

Preheat oven to 350º. Place oats on half pan for 15 minutes.

Meanwhile, combine honey, peanut butter, vanilla, butter and salt in saucepan and cook on medium, stirring constantly until well combined. Immediately pour over cooked oats. Add nuts and fruit; mix until well coated. Reduce heat on stove to 300º. A good choice of dried fruit are unsweetened apricots and cranberries.

Press mixture evenly into greased baking and place in the oven for 25 minutes. Remove from oven and allow to cool completely (about 1 hour) before cutting into 2" squares.

Store in "airtight" containers for them to last about 2 weeks.

Makes 20 bars.
