cranberry relish

this relish is a wonderful complement for pork

Ingredients

  • 2 1/2 cups orange juice
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1 pkg(4 serving size) cranberry flavor gelatin
  • 1 cup finely chopped mixed dried fruit (apricots, raisins, dates)
  • 1 cup chopped walnuts, toasted
  • 1 tbsp grated orange or lemon peel

Preparation

Step 1

mix juice, cinnamon and cloves in medium saucepan. bring to a boil on medium-high heat. add to dry gelatin in large bowl; stir at least 2 minutes until gelatin in completely dissolved. refrigerate about 1 1/2 hr or until thickened.(spoon drwan through leaves an impression)

stir in fruit, walnuts and orange peel. refrigerate 1 hour or until chilled.

spoon fruit mixture into 1 quart serving bowl.

makes 6 servings
