Cocktail Meatballs

Ingredients

  • Meatballs:
  • 4 lbs. ground beef
  • 4 cups bread crumbs
  • 1/4 cup chopped onion
  • 1/2 tsp. dry mustard
  • 3 tsp. salt
  • 1/4 tsp. pepper
  • 2 eggs, beaten
  • 2/3 cup milk
  • 1/4 cup lard or drippings
  • Sauce:
  • 1 cup brown sugar
  • 2 tsp. ginger
  • 1 tsp. salt
  • 1/4 cup cornstarch
  • 2 cups pineapple juice
  • 1 cup vinegar
  • 1/4 cup soy sauce

Preparation

Step 1

Mix beef, crumbs, onion, mustard, salt, pepper, eggs and milk. Form into balls. Brown in lard and drain on paper towels. Pour off drippings. In same skillet mix sugar, ginger, salt and cornstarch. Add pineapple juice, vinegar and soy sauce. Cook and stew until thick. Put sauce in chafing dish and add meatballs. Serve hot with toothpicks.
