Ingredients
- RUB:
- 2 Tablespoons paprika
- 1 1/2 teaspoons dark brown sugar
- 1 1/2 teaspoons sugar
- 1 teaspoons salt
- 1 teaspoons cayenne pepper
- 1/2 teaspoons celery salt
- 1/2 teaspoons pepper
- 1/2 teaspoons garlic powder
- 1/2 teaspoons onion powder
- 1/2 teaspoons dry mustard
- ....................................................
- 1 can room temperature beer or root beer or cola
- 5 lb. chicken; washed/cleaned
Preparation
Step 1
1. Combine all ingredients except beer and chicken in a jar; shake thoroughly before using (You can store left over rub in airtight container for up to 6 months).
2. Use 6 TB of rub and rub inside and outside of the chicken. With bottle opener punch several holes in the top of the can; empty 1/2 of the beer out; place the chicken over the beer can. Holding the chicken upright; place over the beer can until the can is snugly fit inside the chicken. Place chicken into a roasting pan (if the chicken is unstable; use skewers to help it stand).
3. Roast at 350 degrees for 2 hours; or until skin is crisp and chicken is completely cooked. Remove the chicken from the oven and separate the chicken from the beer can. Let sit for ten minutes before carving. Make gravy with drippings
