Fruity Chicken

Ingredients

  • 2 chickens cut in 1/8’s
  • 1/2 head peeled and separated garlic or garlic powder
  • 1/8 cup oregano
  • 1/4 cup red wine vinegar or balsamic vinegar
  • 1/4 cup olive oil-optional
  • 1/2 cup apricots and or prunes (or other dried fruit mixture- I add more fruit)
  • 1/2 cup currants or dried cranberries or raisins
  • 1/4 cup green olives (can rinse to remove salt)
  • Mix all ingredients except chicken. Marinate chicken a few hours or overnight.
  • 1/2 cup brown sugar
  • 1/2 cup dry red wine
  • 1/4 cup parsley
  • Pour over chicken in marinade.
  • Bake at 350 1 – 1 1/4 hours
  • (Start cooking chicken skin side down then flip over halfway during baking time)
