CHICKEN****Chicken or Turkey Magiritsa

11/04/14 - This was good for both. I didn't find it lemony enough though so add a couple of teaspoons extra to my serving.

Ingredients
- 3 servings
- 1 tablespoon fresh lemon juice
- 1 large egg
- 3 cups chicken broth
- 1 tablespoon olive oil
- 1/2 cup finely chopped onion
- Dash of salt
- 6 oz. leftover cooked turkey, chicken or Cornish hen, shredded (light and dark meat)
- 1/2 cup cooked short-grain rice (I used brown basmati)
- 1/2 cup shredded romaine lettuce
- 1/4 cup sliced green onions
- 1 tablespoon chopped fresh dill
- 1/2 tablespoon fresh lemon juice
- salt and freshly ground black pepper
Preparation
Step 1
*Combine* 1 tablespoon lemon juice and egg; whisk until blended, set aside.
*Heat* the oil in a large saucepan over medium-high heat. *Add* the onion and a dash of salt, and sauté 8 minutes or until tender. *Add* broth; bring to boil. *Reduce* heat, and simmer 5 minutes. *Add* turkey and simmer 2 minutes. *Add* rice, and stir to blend. Add a couple of small ladles of the hot soup to the egg and lemon mixture, to temper, then whisk the whole thing back into the soup. . *Keep* warm over low heat if necessary but do NOT boil. *Add* remaining ingredients immediately before serving.
