Ingredients
- 12 oz. fresh or frozen cod or sea bass
- 4 cups assorted stir-fry vegetables from a salad bar or produce department or one16 oz. package frozen stir-fry vegetables
- 4 cups chicken broth
- 2 tea. Cajun seasoning
- 1 14/5 oz. can diced tomatoes, undrained
Preparation
Step 1
Rinse fish; cut into 1" pieces. Set aside.
In a large saucepan, combine vegetables, broth, and Cajun seasoning. Bring to boiling; reduce heat. Cover and simmer for 3-5 minutes or until vegetables are crisp-tender.
Stir in fish and undrained tomatoes; Return to boiling; reduce heat. Simmer, covered, for 2-3 minutes or until fish flakes when tested with a fork.
