Ingredients
- 2 small zucchini
- 2 tsp salt
- 4 green onions, minced
- 1/4 cup parsley, chopped
- 1/4 cup dill, chopped
- 1 egg, beaten
- 3/4 cup grated parmesan
- feta (optional)
- 1/4 cup flour
- Olive oil
Preparation
Step 1
Grate zucchini into colander in sink; toss with salt and let sit for 10 minutes. Squeeze out liquid.
Mix with green onions, parsley, dill, egg, parmesan, and flour.
Heat oil over medium-high heat and pan-fry spoonfuls of the mixture, flattening with spatula - 3 to 4 minutes per side.
Drain on paper towels and season with salt.
