dried cream chile sauce

Ingredients

  • 2 large dried chiles
  • 1 c. heavy cream
  • salt, pepper and cayenne

Preparation

Step 1

cute stems off of chiles and cut in lengthwise. rinse out seeds.cover barely with boiling water and soak for 30 min.discard liquid. chop chiles very fine and combine in sauce pan with cream. whisk while bringing it to simmer. remove from heat for 5 min to give flavor time to infuse. return to heat and simmer for 2 min. season and serve
