SCRAMBLED BREAKFAST

An uncomplicated ham and egg breakfast with mushrooms and onions

Ingredients

  • 8 large egs
  • 2 tbsp water
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp cooking oil
  • 1 cup chopped onion
  • 2 cups sliced fresh mushrooms
  • 1 cup chopped ham (or cooked bacon)

Preparation

Step 1

Beat eggs, water, salt and pepper in medium bowl until smooth.

Heat cooking oil in frying pan on medium-high. Add onion and mushrooms. Saute for 8 to 10 minutes until onion is soft and golden.

Add ham. Heat and stir for about 2 minutes until ham is hot and slightly golden. Reduce heat to medium. Add egg mixture. Heat and stir for about 4 minutes until eggs are cooked but not dry.
