    lb. ground beef

  • 16 oz. can whole tomatoes

  • 1

    pkg. taco seasoning or enchilada sauce

  • 1

    can french fried onions

  • 12

    oz. cottage cheese

  • cheddar cheese

  • 2

    eggs slightly beaten

  • 12- 6

    in. tortillas

  • 1

    chopped tomato

  • shredded lettuce


Brown beef and drain. Add canned tomatoes and taco seasoning. Simmer 5 min. Stir in 1/2 can onions. In bowl, combine cottage cheese, 1 cup cheddar and eggs. Place 3 tortillas on bottom of greased 9X13 dish. Overlap 6 tortillas around sides. Spoon meat mixture into dish. Top with 3 tortilla then cheese mixture. Bake covered at 350 degrees for 45 min. Sprinkle with remaining cheese. Place onions in center of dish and bake uncovered 5 min. Place lettuce and tomatoes around sides before serving.
