CHICKEN CROQUETTES

Ingredients
- Ground chicken 3⁄4 Pound (1 1/2 cups)
- Egg white 2
- Poultry seasoning 1⁄4 Teaspoon
- Canola oil 1 Tablespoon (adjust quantity as needed)
- Chopped onion 2 Tablespoon
- Mushrooms 4 Large, chopped
- Butter 1 Tablespoon
- Cream sauce 1⁄4 Cup (4 tbs)
- Salt 1 Pinch

Step 1
GETTING READY
1. Preheat oven to 375° F.
2. In a bowl mix egg whites, poultry seasoning, chicken and salt.
3. Make croquettes which are 3 inches long and 1 inch wide.
MAKING
4. Fry the croquettes in canola oil till they turn crisp.
5. Saute the mushrooms and onions till they are light brown.
6. Make cream sauce.
7. In a casserole place the onions and mushrooms and place the croquettes on the top.
8. Pour the sauce above.
FINALIZING
9. Bake for 10 minutes.
10. Place hard boiled eggs in between the croquettes.
SERVING
11. Serve chicken Croquettes after sprinkling with paprika.
