Apricot Chicken

Ingredients

  • 1/2 cup all fruit apricot preserves
  • 3 TBSP reduced sodium soy sauce
  • 1 TBSP unseasoned rice vinegar
  • 1 1/2 tsp grated fresh ginger
  • 1 clove garlic, minced
  • 1/3 tsp crushed red pepper flakes
  • 8 small skinless, boneless chicken thighs (about 1 1/2 lbs total

Preparation

Step 1

Put apricot preserves, soy sauce and vinegar into large microwave safe bowl. Microwave for 30 seconds on high, then whisk until the preserves are dissolved. Whisk in ginger, garlic and red papper flakes. Add chicken and marinate for 15 minutes

Preheat broiler to high. l Transfer chicken pieces to a broiler pal. Broil about 3 inches from heat until cooked through and well charred on the surfae, about 5 minutes per side
