CORN****Chili Lime Skillet Corn

Easter 2014 - This was very good and easy enough to throw together even on a week night. Nice hit of heat, too.

Ingredients
- 1 tablespoon EVOO
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1 pinch cayenne pepper
- 1 1/2 cups whole kernel corn; canned or frozen, rinsed and well drained
- 2 tbsp. chopped fresh cilantro
- 1 tablespoon lime juice
- 1/4 cup finely chopped red bell pepper
- 2 tbsp. finely minced fresh jalapeno, if you have it - be sure to add this - one whole jalapeño
Preparation
Step 1
*Heat* oil in a large nonstick skillet over medium-high heat. *Stir* in chili powder, cumin and cayenne.
*Add* corn and peppers and cook, stirring often, until corn begins to brown. *Remove* from heat; stir in cilantro and lime juice and serve.
