French Onion Pizza

Ingredients

  • 1 recipe dough or gluten free pizza dough
  • 2 tablespoons butter
  • 1 large yellow onion, thinly sliced
  • kosher salt
  • 3 tablespoons scotch
  • 2 cups chicken or beef broth
  • 2 tablespooons sugar
  • 6 ounces gruyere cheese, thinly sliced

Preparation

Step 1

Preheat the oven to 400 degrees and prepare a sheet pan with a drizzle of olive oil.

If you are using regular pizza dough, then stretch it out into a large oval and fold the edges over to create a crust. If you are using the gluten free pizza crust, than follow the directions in this recipe for preparing the crust.

Start the onions: In a heavy pan or skillet, melt the butter and add the onions along with a sprinkle of salt. Cook over medium heat until the onions are soft and tender about 7-10 minutes. The pan will be very dry, add the scotch and keep it away from the flame or it will catch fire. Stir it in and then add the 2 cups broth. Cook for another 15-20 minutes over medium-low heat, until all of the liquid has cooked off and the onions are very soft.

Sprinkle them with sugar and season to taste with Kosher salt. Set aside.

While the onions are cooking, drizzle the crust with olive oil and sprinkle with kosher salt and par-bake the crust for 10-12 minutes until it is golden and firm.

When the crust and the onions are finished, spread the onions liberally over the crust.

Arrange the thin slices of gruyere over the top of the onions. Drizzle with a little more olive oil and bake the pizza for another 8-10 minutes until the shrimp are cooked through and the crust is golden.

Sprinkle with a little curly parsley, slice and serve immediately.
