Ingredients

  • 6 peppers
  • 1 lb. ground beef
  • 2 tbs. oil
  • 1/2 cup celery and onion
  • 2 cups cooked rice
  • 1 1/2 cups cheese
  • 16 oz. tomatoes (drained)
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 tsp. basil
  • 16 oz. tomato sauce

Preparation

Step 1

Parboil peppers for 5 min. Brown beef in oil. Add celery and onion. Cook. Blend in rest of ingredients (only one cup of cheese). Place stuffing in peppers. Put in baking dish. Spoon tomato sauce around peppers. (I like to put my stuffing in a baking dish and eat it without the peppers.)


Bake at 350 degrees for 30 mins. covered. Sprinkle with cheese. Bake until melted.
