Ingredients

  • 1 tbsp oil
  • 1 clove garlic, minced
  • 1/2 white onion, minced
  • 1/2 tomato, minced
  • 1/2 pound ground pork (NOTE: Don't use more than 1/2 pound)
  • 1 tbsp soy sauce
  • 1 small potato (yukon or red)
  • 1 tbsp raisins
  • salt and pepper, to taste
  • 4 eggs
  • 2 tbsp oil
  • ketchup

Preparation

Step 1

1. In a preheated pan with oil, saute the garlic, onion, and tomato over medium heat. Add the ground pork and soy sauce and continue stir-frying the mixture until pork is lightly browned. Add the potato and raisins and cover the pan. Simmer the mixture until the pork and potato are cooked. Season with salt and pepper. Set aside and allow to cool. Divide into two portions.
2. Whisk 2 eggs in a wide rimmed but shallow bowl. Place half of the pork and potato mixture into the beaten eggs.
3. In a preheated pan with 1 tbsp oil, pour the mixture and fry one side until golden brown. Flip the omelet to cook the other side. Remove from pan and place on a paper towel to drain off excess oil. Repeat with the second portion.
4. Cut each omelet into four and serve warm with ketchup.

NOTE: Try to use three eggs with one portion to see if it makes it easier to flip and if egg/meat ratio is better.
