Ingredients
- 1 cup couscous
- 1 tsp plus 1 T olive oil
- 16 sea scallops (about 1 1/2 lbs)
- salt and pepper
- 1 orange
- 3/4 lb snow peas
Preparation

Cook couscous according to package directions
Meanwhile head 2 tsp oil in large nonstick skillet over med-high heat. Pat scallops dry, season with 1/4 tsp each salt and pepper. Cook until opaque throughout and golden brown, 2-3 min per side. Transfer to a plate and cover to keep warm
Wipe out skillet. Using a veg peeler, remove 4 strips zest from teh orange, thinly slice. Head remaing T of oil in skillet over med-high heat. Add snow pease, orange zest, 1/4 tsp each salt and pepper, and cook about 2 minutes, tossing. Serve with scallops and couscouse.
