Triple Banana Cupcakes

- Cupcakes:
- 2 cups flour
- 3/4 tsp baking soda
- 1/4 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cups banana puree
- 1/2 cup sour cream
- 2 tbsp dark rum
- 1 1/2 tsp pure vanilla extract
- 1 stick butter
- 1/2 cup sugar
- 1/2 cup light brown sugar
- 2 eggs
- Banana-Caramel filling:
- 1 cup sugar
- 1/4 cup water
- 1/2 cup whipping cream, hot
- 2 tbsp sour cream
- 1 banana, mashed
- 1 tsp lemon juice
- 1/4 tsp sea salt
- Caramel frosting:
- 1 1/2 cups sugar
- 1/2 cup water
- 1 1/2 sticks butter
- 1/4 cup sour cream
- 1 tbsp dark rum
- 2 tsp vanilla extract
- 1/4 tsp salt
- 1 lb cream cheese
- Banana chips for garnish

Preparation
Step 1
preheat oven to 350F. put liners in cupcake tin. Sift dry in bowl. combine banana puree, sour cream, rum, and vanilla beat until creamy. add sugars beat 6-7 min. add eggs, beat well. add dry, beat to incorporate. Fill tins ¾-full Bake 18 to 20 min.
Filling: Stir sugar and water in pan. Cook until sugar dissolves, boil without stirring, syrup turns deep amber remove from heat pour in cream, stir gently. bubbles subside, whisk in sour cream, banana puree, lemon juice, and salt.
Caramel frosting: Stir sugar and water in pan. Cook until sugar dissolves, boil without stirring, syrup turns deep amber remove from heat stir in butter, sour cream, rum, vanilla, and salt.
beat cream cheese until smooth. beat in caramel. Mix well
Fill cupcakes: cut out hole in top of cupcake. Transfer filling into small bag, snip corner, pipe 1/2 tsp caramel into cavity. Frost cupcakes. Garnish with banana chip
