Garlic Paprika Chicken Wings

Ingredients

  • 1 Avocado
  • 1 ¼ lb chicken drumsticks
  • 3 cloves garlic
  • ½ pint grape tomatoes
  • 1 lime
  • ½ (5 oz) pkg spring mix (mixed greens)
  • black pepper
  • Dijon mustard
  • extra virgin olive oil
  • paprika
  • salt

Preparation

Step 1

1. Preheat the oven to 500°F. Line a baking dish with foil.

2. Peel and mince or press the garlic; transfer to a medium bowl.

3. Add lime juice, olive oil, paprika, salt, and pepper to the minced garlic and mix well.

½ tsp black pepper

4. Add the chicken drumsticks to the garlic-paprika mixture and toss until well coated. Place the drumsticks in the baking dish.

5. Place the drumsticks in the oven and bake, flipping halfway through cooking time, until they are cooked through and browned, 20-25 minutes.

6. In a small bowl, prepare the dressing by whisking together lime juice, olive oil, Dijon, salt, and pepper.

7. Wash and dry the mixed greens.
½ (5 oz) pkg spring mix (mixed greens)

8. Wash and halve the tomatoes.
½ pint grape tomatoes

9. Halve and pit the avocado; scoop out the flesh and medium dice.

10. To serve, arrange the greens on plates, top with tomatoes and avocado, and drizzle with the dressing. Add chicken drumsticks to the side. Enjoy!
