Ingredients
- Olive oil (about 3 tablespoons)
- Lots of garlic (at least 3 cloves) minced
- Pancetta
- 1/2 teaspoon salt
- 1 tablespoon balsamic vinegar
- one small (or 1/2 large) head of radicchio, ripped into small pieces
- Parmigiano cheese (about 1/2 cup)
- Toasted pine nuts (optional)

Preparation
Step 1
In a large pan, heat the olive oil.
Add pancetta, garlic, and salt, and sauté until garlic is barely golden.
Remove pan from heat and add balsamic vinegar.
Add radicchio to pan, toss quickly, and transfer to salad bowl.
Add parmigiano, toss lightly, and serve immediately, while salad is warm.
Toasted pine nuts may be added for a garnish.
Serves 4.
