Ingredients
- Crust ingredients:
- 2 1/2 cups mashed sweet potatoes
- (Oven - Heat to 400. Poke holes in potatoes and bake 45-60 min.
- Microwave - Poke holes in potatoes and bake 8-10 min. per potato)
- 2/3 cup granulated sugar
- 1/4 tsp. salt
- 3/4 tsp. vanilla
- l egg, beaten lightly
- 3 tbsp. unsalted butter, melted
- 2/3 cup brown sugar
- 3 tbsp. flour
- 1/2 cup finely chopped pecans
- 3 tbsp. butter, melted
- 1/2 tsp. vanilla
Preparation
Step 1
Preheat oven to 350. Spray a 9x9" casserole dish.
Use a mixer to whip together sweet potatoes, salt, sugar, vanilla, egg, and butter. Mix until potatoes are light and fluffy.
Pour into the prepared dish and bake 30 minutes.
Meanwhile combine crust ingredients in a small bowl.
Sprinkle crust ingredients over casserole and bake 10-15 minutes longer, until lightly browned.
