Ingredients

  • 1.5 lbs lean beef
  • Salt & Pepper
  • 3 Tbsp butter
  • 1 cup sliced fresh mushrooms
  • 1 large onion, sliced
  • 2 Tbsp flour
  • 1 Can Consomme – Beef
  • 2 Tbsps tomato paste
  • 1 tsp dry mustard
  • 3 Tbsps sherry
  • 2/3 c. sour cream

Step 1

Remove fat and gristle, cut into narrow strips about 2.5 inches long, .75 inches wide and ¼ to ½ inches, thick. Dust with salt and pepper and set aside for 2 hours at room temperature. Later melt 3 Tbsps butter in skillet. Saute onions for 2 minutes, then add mushrooms and cook until tender. Remove and set aside.
Add 1 Tbsp butter or more, when very hot brown beef, leaving them rare. Set aside.

To the remaining butter, bend in flour and brown well. Slowly add consommé, stirring well to make a smooth gravy. Next add sherry, tomato paste, and mustard, blend well. Add beef, onions, and mushrooms and simmer slowly for 20 minutes. 5 minutes before service stir in sour cream.
