Ingredients

  • 4 c. Roma plum tomatoes, finely chopped
  • Salt & pepper to taste
  • Cooking sprsay
  • 20 sheets Fillo Dough, thawed
  • 1/2 c. fresh basil leaves, finely chopped
  • 2 c. grated mozzzarella
  • Fresh basil leaves for garnish

Preparation

Step 1

In a large bowl, season chopped tomatoes with salt and pepper. Set aside. Lightly coat a 3 inch cup muffin pan with cooking spray. Layer 5 fillo sheets, lightly coating each with cooking spray. Cut six 4 inch circles Bake tarts in preheated 350 degree oven 8 to 10 minutes or until golden brown. Spoon 2 tablespoons of chopped tomatoes into tarts. Sprinkle withl basil and top with 1 tablespoon of mozzarella. bake in preheated 350 degree oven for 3 to 4 minutes or until cheese melts. Garnish each tart with basil leaves. Serve immediately.
