Ingredients
- 2 tbsp butter
- 1/2 cup diced celery
- 1/2 cup diced onions
- 1 cup sliced mushrooms
- 1 1/4 cup flour
- 1 cup cornmeal
- 1 tbsp sugar
- 1 tbsp sugar
- 1 tbsp baking powder
- 1 tbsp basil
- 1 tbsp oregano
- 1 tbsp chili powder
- 2 eggs beaten
- 1 1/2 cups milk
- 1/2 cup melted butter
- 3/4 cup grated monteryjack cheese
- 1/4 cup diced red pepper
- 1/4 cup diced green pepper
- 1/4 cup diced hot pepper
Preparation
Step 1
In a medium frying pan melt butter and saute celery, onion, and mushrooms (set aside).
In a large bowl mix flour, cornmeal, sugar, baking powder, and seasonings. Make a well in the centre.
Add eggs, milk, butter, cheese, and peppers to cooled sautéed mushroom mixture. Pour into centre of well of dry ingredients. Stir until moistened. Bake in greased 9 x 9 pan for 30 - 35 minutes at 350°.
