Ingredients

  • 3 large tomatoes
  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 clove garlic, crushed
  • 1 TBS. chopped parsley
  • 1 TBS chopped basil
  • 2 TBS chopped onion

Step 1

Cut tomatoes into 1/2 inch thick slices and arrange in a large shallow dish; set aside. Combine remaining ingredients in a jar; cover tightly and shake vigorously. Pour over tomato slices. Cover and marinate in refrigerator for several hours.
