Chicken with Raspberry Sauce

Ingredients

  • Sauce:
  • 1/2 Chicken Breast---pounded so it is thin
  • Olive oil
  • Italian bread crumbs
  • Raspberry Fruit only jam (2 parts)
  • Balsamic Vinegar (1 part)

Preparation

Step 1

Dip the chicken breast in the oil and then coat it with the breadcrumbs. Wrap snuggly in foil.

Bake at 400 for 1 hour.

To make sauce:
Combine balsamic vinegar and the raspberry jam in pan and stir together until warm. Spoon over chicken.
