Roasted Red Peppers, My Way

Gorgeous, ultra delicious, roasted red peppers, so superior in taste to the jarred, IMVHO

Ingredients

  • Red Peppers
  • Olive Oil
  • Sliced garlic

Preparation

Step 1

Get some gorgeous red peppers.

Cut off the tops by inserting a knie in a circle around the stem. Remove the tops and pull of as many seeds and stems as possible.

Preheat the oven to broil. Place peppers on a broiler sheet or pan. Broil them until charred on all sides. turn as needed.

Immediately upon removing them from oven, place them in brown paper bags. Roll to close it up. Let them steam and cool in there a spell. As soon as they are cool enough to handle, remove and discard the skins.

At this point, you can refrigerate as is in the fridge or a week to use as you please.. or to use for antipasto..
Toss them in a bowl with some olive oil and slices o garlic. Let it marinate room temp or a ew hours, turn occasionally. Slice into strips.. Serve with the delicious juice it forms. These are EXCELLENT!
