  • 1 3/4 cups whole wheat pastry flour
  • 2 1/2 tsp baking powder
  • 1 cup powdered fructose
  • 3/4 cup lowfat buttermilk
  • 3 egg whites
  • 1 cup thawed frozen blueberries, reserving juice

Preparation

Step 1

Heat oven to 375

In a small bowl combine flour, baking powder, and fructose powder.

In a mixing bowl whisk together buttermilk, egg whites, and 2 tbsp reserved juice.

Add flour ingredients to wet ingredients, stirring to just combine. Add the berries.

Pour into muffin tins. Bake until lightly browned. About 20 min.
