Ingredients

  • 12 manicotti shells
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 1/2 pound ground beef
  • 1/4 pound Italian sweet sausage
  • 3 1/4 cups marinara sauce
  • 1/4 Italian bread crumbs
  • 1 cup grated mozzarella
  • 2 tablespoons finely chopped parsley
  • salt and pepper to taste
  • 1/2 cup water
  • 3 tablespoons grated Parmesan cheese

Preparation

Step 1

1. Cover manicotti with boiling water, let stand 5 minutes. Drain rinse in cold water.
2. Heat oil in frying pan. Add onion, ground beef and sausage. Cook over moderate heat, breaking up meat with fork until brown. Remove from heat and drain, let cool for 5 minutes. Add ¼ cup marinara, bread crumbs, mozza, parsley, salt and pepper, mix well.
3. Preheat oven to 375 degrees.
4. Heat remaining 3 cups marinara with ½ cup water.
5. Stuff each shell. Pour ¾ cup heated sauce into bottom of 13 X 9 X 2 inch baking pan. Place stuffed manicotti on top of sauce, top with remaining sauce. Cover with foil and bake for 45 minutes. Uncover and sprinkle with Parmesan. Bake uncovered for 5 more minutes. Remove and serve.
