Raw Coconut Cauliflower Rice with Mango Salsa

Raw food is all about getting ultra creative with your veggies. Here artfully chopped cauliflower and finely
shredded coconut will take the place of a traditional rice. WIth a hint of lime, a sprinkle of cilantro and a
topping of juicy mango salsa, this tropical inspired dish will transport you to the islands in no time.
Ingredients
- Coconut Cauliflower Rice
- 1 medium head of cauliflower
- 1 cup finely shredded coconut
- 3 Tbsp cold pressed coconut oil
- 1/4 cup chopped cilantro leaves
- Juice of 1/2 lime
- 1 large clove of garlic, minced
- 3/4 tsp Himalayan salt
- Mango Salsa
- 1 1/2 cups chopped ripe mango
- 1 cup diced red bell pepper
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro leaves
- Juice of 1/2 lime
- 1/2 tsp chili powder
- 1/8 tsp salt
Preparation
Step 1
1. Roughly chop the cauliflower. Place
half of it in the food processor fit
with the S-blade and pulse to chop
into rice sized grains. Do not over
process. Scrape into a large bowl
and repeat with the remaining
cauliflower. Scrape the rest of the
cauliflower into your bowl.
2. Add the coconut, coconut oil,
cilantro, lime juice, garlic and salt to
the bowl and mix very well.
Mango Salsa
1. Toss all ingredients in a bowl and
mix well to combine the flavors.
