Baked Tilapia with Herb Butter

Ingredients

  • 4 tbsp unsalted butter, softened
  • 2 tbsp chopped fresh tarragon or basil
  • 8 oz. sliced mixed mushrooms
  • 4 celery stalks, sliced
  • 1 bunch scallions, sliced
  • Kosher salt and freshly ground pepper
  • 4 6 oz. tilapia fillets

Preparation

Step 1

Preheat the oven to 400 degrees F. In a small bowl, mix the butter and tarragon until combined; set aside.

Lay out 4 large pieces of foil. Layer the vegetables in the center of each piece of foil, starting with the mushrooms, then the celery, then the scallions. Dot the vegetables with some of the herb butter and season with salt and pepper. Lay the fillets over the vegetables; dot with remaining butter. Sprinkle with salt and pepper.

Wrap each fillet in the foil to seal completely. Place on a baking sheet and back until fish is cooked through, 18-22 mins. Remove the packets from the oven and let sit 2 mins before opening. Transfer to plates and drizzle with cooking juices.
