Tiny Turkey Meatball & Chickpea Soup With Brocolli Rabe

Ingredients

  • 2 cups low-sodium chicken broth
  • 2 cups low-fat salt-free marinara - i used Rinaldi Organic
  • 1 15-oz can chickpeas, drained and rinsed
  • red pepper flakes to taste
  • 1 1/3 lbs lean ground turkey
  • salt to taste
  • 1/2 lb broccoli rabe (1/2 package)
  • 2 tbls grated pecorino romano

Preparation

Step 1

1. Heat chicken broth, marinara sauce, beans, crushed red pepper flakes to a simmer
2. Season ground turkey with salt and pepper flakes
3. Roll turkey into 40 small meatballs
4. Stir in broccoli rabe and bring to a simmer; add meatballs and cover with lid to lightly poach the meatballs until just cooked through - stirring - about 6 minutes.
