Ingredients
- 3 cups all-purpose flour
- 1 3/4 cup sugar
- 1 tsp baking soda
- 1 tsp cinnamon
- 3/4 tsp salt
- 1/4 tsp ground nutmeg
- 1 c. vegetable oil
- 1/2 c. apple juice
- 2 tsp. vanilla extract
- 3 large eggs
- 3 medium Granny Smith apples, epeled, cored and chopped
- 1 c. chopped walnuts
- 1 c. golden raisins
- confectioners' sugar for garnish
Preparation
Step 1
Preheat oven to 350 degrees. Grease and flour 10-inch bundt pan. Into large bowl, measure all ingredients except apples, walnuts, raisins and confectioners' sugar. Beat until well mixed with electric mixer on low spee, scraping sides of bowl as needed. Stri in apples, walnuts and raisins.
Spoon batter into bundt pan, spreading evenly. Bake 1 hour 15 minutes or until cake pulls away from side of pan and toothpick inserted in center of cake comes out clean. Cool cake in pan on wire rack 10 minutes.
Invert cake onto wire rack. Remove pan and cool completely. Sprinkle with powdered sugar to serve.
