Ingredients
- 3 to 3 1/2 pound chicken broiler
- 2 tbsp. sherry or orange juice
- 2 tbsp. soy sauce
- 1/2 tsp. garlic powder
- Kumquat sauce
- 1/3 cup preserved kumquats or peaches or apricats
- 1/2 cup orange juice
- 1 tbsp. lemon juice
- 1 tbsp cold water
- 1/4 tsp. ground ginger
- 2 tsp. cornstarch
- 2 tbsp. slivered almonds

Step 1
Mix orange juice,orange perserves,lemon juice, and ginger in 1 quart saucepan. Heat to boiling. Mix water and corstarch,stir into orange juice mixture. Heat to boiling,stirring constanly. Boil and stir about one minute. Stir in almonds.
Heat oven to 375 degree. Place chicken in roasting pan.
Roast for 45 minutes. Mix sherry,soy sauce,and garlic powder,brush onto chicken, until reaches internal temp. 180deg.
