Ingredients
- 2 Cups Water
- 1 Cup Long-Grain White Rice
- 1 Tablespoon Butter
- 1/2 Teaspoon Salt
- 3/4 Cup Chunky Salsa
- 1/2 Cup Diced Green Peppers
- 1/4 Cup Heavy Cream
- 1/4 Cup Extra-Sharp Cheddar Cheese, shredded
- 1 Tablespoon Cream Cheese
- 1/4 Teaspoon Cumin
- 1/4 Cup Mozzarella Cheese, shredded (topping)
- 1/4 Cup Extra-Sharp Cheddar Cheese, shredded (topping)
Preparation
Step 1
In medium saucepan, add water, rice, butter, and salt. Bring to a boil, then reduce heat and simmer for 15 minutes, then remove from heat and cover for 5 minutes. In large fry pan, add salsa, green peppers, heavy cream, cheddar cheese, cream cheese, and cumin. Heat until everything is well blended. When the rice is done, pout it into the fry pan and mix with sauce. Spray a cooking dish with cooking spray, and pour mixture in and even out the top. Sprinkle remaining mozzarella and cheddar cheese on top. Bake in a pre-heated 350 degree oven for 25 minutes.
