Key Lime Coconut Pecan Cake Mix Cookies

Ingredients

  • 1 box key lime cake mix
  • 1 1/2 cups thawed frozen whipped topping
  • 1 egg
  • 1/2 cup coconut
  • 1/2 cup finely chopped pecans
  • 3/4 cup powdered sugar

Preparation

Step 1

Preheat oven to 350 degrees. If you are not using a silicone baking mat or parchment paper then spray your cookie sheets with cooking spray.

Combine all ingredients except the powdered sugar and mix well. The dough will be sticky so you may want to wear gloves.

Put your powdered sugar in a shallow bowl and roll a tablespoon of dough in the sugar (I used a small cookie scoop).

Bake for about 8-10 minutes or until the edges are light brown. Allow the cookies to cool about 5 minutes on the cookie sheets and then move to a wire rack to cool completely.

Yield: 24-30 cookies
